In an effort to streamline food and beverage operations
and offer more selections to guests, The Desmond Hotel and Conference
Center underwent a million-dollar renovation project of their kitchen
facility. The old kitchen did not meet their requirements nor could
it handle the increased production volumes required by the additional
guests and banquet rooms.
MLB expanded the building to provide space for offices,
a loading dock, a new cooler and freezer, and dishwashing and food
preparation areas. The new layout is efficient and allows flexibility
to offer a multitude of dining options. It created an attractive
and healthy working environment for the staff, increased productivity,
and ensures high hygienic standards for the food preparation. The new
kitchen utilizes state-of-the-art kitchen equipment and coolers to
ensure the highest standards of quality and sanitation in addition,
new lighting and floors were installed to complete the new look.
The kitchen services the hotel's lounge, casual dining
at Simpson’s, and fine dining at The Scrimshaw. In undertaking
this project, MLB provided The Desmond with the ability to maintain
full operation throughout the project during the busy holiday season
to the complete satisfaction of New York State Department of Health
officials.
This project was MLB’s second successful assignment
at The Desmond following the $5 million King Street expansion in
the 1980’s.
